Parsley has been in use for more than two thousand years. The Cherokee used it as a tonic to alleviate bladder problems. In Greece, Parsley was used to adorning the tombs of the dead, giving it a strong association with death.

It is sacred to Persephone, and legend states that the lengthy germination period for Parsley to grow is due to the seeds needing to travel to the underworld and then back again before establishing their long taproot. Parsley is used as a garnish because ancient custom holds that an offering to the dead must be made in order to show gratitude for the lives sacrificed for the meal. Modern witches can use parsley to decorate the Samhain altar. 

When eaten, Parsley provokes lust and promotes fertility. Be careful, however, don't cut parsley if you are in love. It is believed doing so will cut your love as well. It can also be used in purification baths. 

Parsley is rich in sodium and potassium, which are necessary to regulate fluids in the body. It also helps lower blood pressure and slows the pulse.
